1 Banana
2 Chocolate Smartcakes®
1 cup Unsweetened almond milk
1 cup Ice cubes
A few Mint leaves

1 Banana

½ cup Frozen mango chunks
1 cup Unsweetened almond milk

3. Smart Bread Pudding

Ingredients

1/2 cup Cinnamon Smartcakes® cubed
1/2 cup Plain Smartbun® cubed
1.5 cups Unsweetened coconut milk
1.5 cups Unsweetened apple sauce
2 Whole eggs, lightly beaten
1 Red delicious apple, peel on, finely diced
¼ cup Walnuts

 

Sauce

3 scoops Vanilla whey protein powder
¼ cup Fat-free plain yogurt
¼ cup Coconut milk
¼ cup Blueberries (garnish)
Mint (garnish)

 

In a large mixing bowl, add coconut milk, unsweetened applesauce, and eggs. Beat lightly with a whisk. Fold in Smart-bun® cubes, walnuts, and apples. Transfer to oven safe dish, cover and refrigerate for at least an hour. This will allow the Smartbuns® and Cinnamon Smartcakes® to soak up the liquid. Preheat your oven to 350F and bake the bread pudding for 45-50 minutes, until it’s set and the top turns golden brown. Remove from oven and allow to cool until it reaches room temperature, then cover and transfer to mason jars and refrigerator. When ready to serve, make the sauce by adding protein powder and yogurt to a mixing bowl and mix with a spoon or whisk until well incorporated. Let the mixture rest for about a minute and give it another quick stir. It will become nice and smooth. Add milk and stir until creamy. Pour generously over bread pudding. Add fresh blueberries and a sprig of mint to garnish.

2. Smart Strawberry Trifle

Ingredients

1 Chocolate Smartcake®
1 Coconut Smartcake®
4 tbsps Unsweetened whipped heavy cream (or coconut whipped topping)
1 cup Fresh strawberries, sliced

Optional: Cocoa powder to “dust” or a sprig of your favorite herb. Mint works well.

Clean the strawberries and slice them to the desired size. Whip heavy whipping cream in a bowl. Have a clean Mason jar set aside.

Heat strawberries over low heat until a sauce is formed. Stir frequently. Scoop two, full tbsp. of the fresh, low carb, strawberry sauce into the Mason jar as the first layer. Take the Chocolate Smartcake® out of its cup and gently press into the Mason jar as the second layer, breaking it a little, so the cake has the chance to soak up the strawberry sauce. Add 2 tbsp. of heavy whipping cream then arrange some of the strawberry slices on top and repeat all the steps starting with the strawberry sauce, but this time adding the Coconut Smartcake®. Finish off with one final tbsp. of heavy whipping cream and dust of cocoa powder and slices of strawberry or just dice strawberries and add a sprig of fresh mint or another herb. Basil adds a great twist. For a summertime burst of flavor, substitute chocolate with Lemon Smartcakes®.

Refrigerate for an hour and serve.

1. Gluten-Free Strawberry Shortcake

Sometimes simple wins. Just choose some classic Smartcake® flavors like chocolate, cinnamon, and coconut. Cut each in half. Top with heavy whipping cream or coconut whipped cream. Drizzle some sugar free caramel and fudge syrup over it and slice some strawberries over the top of them. An under 150 calorie dessert that is too much for one person to finish.
